Refreshing Summery Mint Chocolate Smoothie
In honor of my usual annual Summer Solstice Smoothie Soirée which I’ve had to forgo this year since, when I would have been preparing everything for that event I was focusing on healing from a very long case of Long Covid (just look through the blog to see how long…my last post was a year ago, GAH!), today for the Summer Solstice I’m sharing with you my favorite smoothie of late!
Onto bright and wonderful, delicious and nutritious, happy and healthy goodness!
Admittedly, this smoothie isn’t the prettiest color to look at — LOL. But close your eyes and sip because it is really yummy and packed full of nutrition with antioxidants, greens, protein, hydration, and more!
All you need is the milk of your choice, greens, fresh mint leaves, dates, cacao powder,
maca powder, protein powder and ice!
The recipe…
Mint Chocolate Smoothie

1 Cup Milk of Choice (any plant or animal milk works)
2 Cups Greens of Choice (favorites are spinach, kale, chard, dandelion)
Up to 1 sprig of Fresh Mint Leaves (to taste)
4 Dates — pitted
3 Tbs Cacao Powder
1 Serving Protein Powder of Choice
1 TBS Maca Powder
2 Cups Ice
Add all ingredients to a blender and whizz up to a slushy frappé consistency.
Add more ice if you prefer a thicker smoothie, less for a lighter treat.
